Vegan Cesar Salad

We have had this salad 5 out of the past 7 nights for dinner. Corey has requested it and says this salad should be called Crack Salad because it is so good. We have done a few different iterations of this salad so feel free to get creative with what veggies you have but don’t forget the dressing and the grilled onions, that is the best parts! Also a good crunchy green in my opinion.

Almond Parmesan ⠀

  • 1 cup mixed nuts or any type of nuts. I used almonds, pecans, pumpkin seeds and a few Brazil nuts⠀

  • 2 tbs nutritional yeast⠀

  • 1 tsp of each garlic powder, basil and oregano⠀

  • 1 tsp sea salt

  • 1 tbs olive oil⠀

Blend in a food processor until nuts are a fine texture⠀

Creamy Cesar Dressing ⠀

  • 1 cup cashews (soaked in hot water for 3-5 mins to soften then drained) ⠀

  • 1 tbs olive oil or tahini for a thicker dressing⠀

  • 1/2 of a lemon, juiced⠀

  • 1 clove of garlic ⠀

  • 1 tbs nutritional yeast⠀

  • 1-1/2 tsp chipotle powder (depending on how spicy you like things 🌶)⠀

  • 1 Tbs apple cider vinegar ⠀

  • 1 tbs Dijion mustard

  • 1/2-1 cup water (depending on how thin you want the dressing⠀

  • salt and pepper to taste

  • 2 tsp worcestershire (optional)

⠀Blend all ingredients and add water in slowly until desired consistency. ⠀

Crunch Chickpea Croutons ⠀

  • 1 1/2 cup chickpeas (or 1 can of chickpeas)

  • 1 tbs oil (I used avocado oil)

  • 1 tsp of salt, cumin, garlic and smoked paprika (or sub chili powder)

Toss chickpeas with oil and spices and lay flat on a baking sheet. Roast at 425 for 25-30 mins rotating half way. Let cool for 2-3 mins to finish getting extra crispy!

Salad Assembly (for 2 salads)

This is where you can get creative.

  • 4 cups of greens. I like doing a mix of kale and romaine lettuce

  • 1/2 onion thinly sliced and sautéed over medium heat with 1 tbs of olive oil until they are a deep golden brown, about 8-12 mins the slower you cook them the better!

  • other optional ingredients: cucumber, radish, fennel, sauerkraut… you do you

Toss all veggies together in a bowl, add chickpeas and nut Parmesan mix, serve into bowls and dressing with salad and Enjoy!

**NOTE the dressing will be enough for 4-6 salads depending on how much dressing you use.
